Check out this video for some very interesting UI effects. It's called CompCom, and it's a re-merge of Beryl and Compiz. There's some eye candy effects and some interesting usable effects (dodge). Kudos to the people working on this.

Since Apple brought on the founders of Fingerworks, I think I know why the iPhone doesn't have ''cut and paste''. It's because the gestures for cut and paste are used for different actions on the iPhone from the Fingerworks keyboards.
